Before 1997, Chongqing was part of Sichuan Province, collectively known as "Ba Shu." This region boasts a rich history, with Chongqing and Sichuan deeply intertwined. Both areas have influenced each other's cuisine, language, and customs.
Some old restaurants in Chongqing are located on slopes with narrow storefronts that can accommodate only a few tables. People use high stools as tables and low stools as seats, hence the name "stool noodle" for this arrangement.
